A winner of numerous awards over the years, including Top Restaurant in Galway and Best Sustainable Restaurant in Ireland, West is known for serving classic dishes with a modern twist, using the very best locally sourced ingredients.
The Pins Gastro Bar is at the heart of the hotel, a more casual dining option, it holds to the same philosophy as West, using locally sourced ingredients to create exquisite dishes. The 12’s Head Chef Martin O’Donnell (dubbed as ‘one of Ireland’s hottest chefs to look out for’), has created a menu that focuses on healthy food – simple, fresh and with a twist. He uses local Galway producers who are passionate about excellent ingredients, following West’s motto, ‘true to the region, true to the season’.

When choosing beef, Martin first looks for a great breed, then he looks for good age and excellent marbling for flavour. It’s easy to see why he chooses to serve Irish Hereford Prime at both West and The Pins. It is a breed that is renowned for their exceptionally flavoursome and tender beef. Raised by local farmers, such as James McGeough of Oughterard, who supplies The 12, Irish Hereford Prime beef cuts are famous for their unique, fine-grained marbling which gives the beef its exquisite flavour.
