Where It All Began
The story of Irish Hereford Prime is rooted in a shared pursuit of exceptional beef. Nearly 30 years ago, as demand grew for beef that consistently delivered tenderness, flavour and quality, the journey began with a search for something truly distinctive.
One of the earliest champions of what would become Irish Hereford Prime was Jean Denaux, a master butcher from Sens in Bourgogne, France. Coming from a family of farmers and butchers, Jean had spent his life focused on one guiding principle: “The pleasure on the plate must come first.”
Through his work in cattle breeding and butchery, Jean understood the importance of genetics, natural feeding and respect for the animal. That search led him to Ireland, where he discovered Hereford cattle raised on grass by skilled farmers, working in partnership with ABP Food Group in Nenagh. He recognised the unique qualities of the breed and the farming system, exceptional marbling, flavour and natural tenderness.
Long before Irish Hereford Prime became an established brand, pioneers like Jean saw its potential. By bringing this beef to leading French chefs and restaurants, he helped build an early reputation for a product that stood apart.
