Gust’eaux

Belgium
Situated on a sunny terrace on the banks of the Leie River between Kortrijk and Kuurne in Belgium, Gust’eaux restaurant had an unusual beginning.
First created as a space to demonstrate the use of charcoal ovens, the demo kitchen grew and expanded to become the busy restaurant that serves delicious food to local and visiting customers today.

Owner Stijn Maes explains that opening the restaurant was almost accidental, it grew step by step, and Stijn’s passion for cooking great quality beef grew along with it.
Still true to its charcoal oven foundations, Gust’eaux is famous for serving meat on the bone, grilled in an open kitchen. The beef is not only the star on the plate, it is also a central part of the restaurant experience, the visual celebration of great beef, flames, smoke and the intensity of the busy kitchen is central to the restaurant’s offering. Gust’eaux, Stijn explains is all about honest cooking done properly.
Stijn was introduced to Irish Hereford Prime by their suppliers, Bimpex and he is delighted to be able to serve such a high-quality product.

“When you prepare it, you immediately notice the quality of Irish Hereford Prime. The first time you turn it on the open grill, you get that aroma.”

“My greatest satisfaction is seeing smiles on the faces of our guests and also the faces of our staff. That’s the best reward you can receive every day.”

The consistency, flavour, tenderness and juiciness of Irish Hereford Prime are what has Stijn choosing it for his restaurant time and time again. He believes that as a top-quality product it’s best served simply, to let the flavours shine through.

“There’s no need to overthink it.”

The restaurant offers its guests a choice of beef breeds as part of its tasting menu and staff report that customers often report that the Irish Hereford Prime was their favourite.
