Dooley’s Seafood and Steakhouse restaurant sits right on the water’s edge in Waterville Co. Kerry.

Renowned for its amazing sea views, delicious steak and fresh seafood, Dooley’s attracts visitors and locals for lunch and dinner at its Oceanfront restaurant and welcoming Deck Rooftop bar. The restaurant is located between two world-class golf courses, the famous Waterville Golf Links and Hogs Head Golf Club, and golfers often drop in to enjoy the local, seasonal menus.

Katie Farrell is Head Chef at Dooley’s restaurant which was opened by her husband in 2007. Having worked in the well-known Smith and Wollensky’s Steakhouse in New York for ten years, David Farrell understands what makes the perfect steak. After trying many different suppliers, he settled on Irish Hereford Prime.

“When he was trying to source the perfect steak, he went through about fifteen or twenty different cuts of meat, looking for the best steak, the perfect age, thickness and marbling, and Irish Hereford Prime striploin ticked all the boxes.”

The restaurant buys in the whole striploin and Katie then trims it. They use the ends of the cut for stew or stir fry and then the centre cut is served to customers with seasonal vegetables and a sauce.

“You could not beat Irish Hereford Prime; it has never let me down. I have never had a complaint; it is actually the perfect steak. People always say that it is the best steak they’ve ever had.”

Sustainability is very important to Katie and Dooley’s restaurant is designed to minimise any waste.

“Everything is used. When we buy Irish Hereford Prime, every part of it is used, it’s the same with the vegetables and our seafood, we fillet and gut it ourselves, using the bones for stock. There is zero waste.”

Katie believes that Irish Hereford Prime is a vital component for her business.

“I would panic if I couldn’t get it, I don’t know what I would do without it!”
