Dining Room is an intimate and elegant restaurant in Castlebar in Co. Mayo.

Serving seasonally inspired dishes, Dining Room has become a favourite with locals and tourists alike. Kevin Stirzaker is the Chef Owner of Dining Room and alongside his wife Shirley, they strive to make the restaurant a warm and welcoming place to visit.

The atmosphere is relaxed and homely, with excellent service and an impressive array of wines. Kevin focuses on using top quality ingredients in all his dishes and every element is freshly prepared in the kitchen. When it comes to his choice of beef, Kevin believes it is vital to know the background of how the animal has been cared for, where it has been raised. He believes that it all comes back to traceability.

“While you can look after a product in your restaurant, if it hasn’t been looked after before you get it, then there is no point, because somewhere down the line you’ll get a fault, and you won’t know where it has come from. But there is never any fault with Irish Hereford Prime.”

With Irish Hereford Prime Kevin knows how the animal has been looked after and he sees this coming across in the texture, marbling and consistency of the beef. “The marbling, the fat content, every little part has to be right and with Irish Hereford Prime, it just fell into place.”

“We want to just use really good, quality ingredients. That is the most important part of everything we do here, and we want to ensure that everything we serve is prepared from scratch.”

Kevin serves it grilled with a peppercorn sauce, its’ simplicity and the purity of any accompaniments lets the beef’s flavour shine.
