Ultimate Steak Sandwich

Ingredients

  • 2 Irish Hereford Prime Sirloin Steaks
  • 2 ciabatta rolls
  • 2 cloves garlic (minced)
  • Salt & pepper
  • 2 tbsp garlic butter
  • 1 onion (finely sliced)
  • 1 tbsp light muscovado sugar
  • 2 tbsp olive oil
  • Fresh rocket
  • 60g vintage cheddar

Method

  1. Marinate the steaks with 1 tbsp olive oil, garlic, salt, and pepper. Set aside.
  2. Sauté the onions in 1 tbsp olive oil over medium heat for 20 minutes until soft and golden. Add sugar and stir until dissolved. Set aside.
  3. Heat a pan to high and sear the steaks for 3.5 minutes on each side for medium-rare. Add 1 tsp garlic butter after flipping for extra flavour.
  4. Rest for 5-7 minutes.
  5. Spread garlic butter on one side of the ciabatta and grated cheddar on the other. Grill until golden and bubbling.
  6. Assemble the sandwich: spread caramelised onion on the bottom half, slice the steak against the grain, season, and layer on top.
  7. Add rocket and finish with the top of the ciabatta.
