Three Easy Steak Marinades & Rubs

A great steak doesn't need much, but a simple marinade or rub can add an extra layer of flavour and help create a delicious crust when cooked. These three easy options each bring something different to the table, from the fresh citrus notes of Lemon & Herb, to the sweet and savoury balance of Soy & Ginger, and the rich smoky flavours of a classic Steak Rub. Ingredients

1. Lemon & Herb Marinade

  • Juice of 1 lemon
  • 60ml olive oil
  • 2 tsp Italian herb seasoning
  • 3 garlic cloves, minced Salt and pepper

2. Soy & Ginger Marinade

  • 3 tbsp sesame oil
  • 60ml soy sauce
  • 2 tbsp honey
  • 2 garlic cloves, minced
  • Thumb-sized piece of ginger, peeled and grated

3. Smoky Steak Rub

  • ½ tsp garlic powder
  • 2 tsp brown sugar
  • 1 tsp cornflour
  • ½ tsp chilli powder
  • ½ tsp smoked paprika
  • ½ tsp oregano Salt and pepper

Method

  1. Prepare your chosen marinade or rub by combining all ingredients in a bowl.
  2. For the Lemon & Herb and Soy & Ginger marinades, place the steaks in a shallow dish or resealable bag and pour over the marinade. Turn to coat evenly, cover and refrigerate for at least 1 hour, or up to 8 hours for deeper flavour.
  3. For the Smoky Steak Rub, pat the steaks dry with kitchen paper and rub the seasoning mixture evenly over both sides. Leave at room temperature for 20–30 minutes before cooking.
  4. Remove marinated steaks from the fridge 20–30 minutes before cooking to allow them to come to room temperature.
  5. Cook the steaks on a hot barbecue, grill pan or frying pan to your preferred doneness, turning once during cooking.
  6. Rest the steaks for 5 minutes before serving to allow the juices to redistribute.
