Steak fajitas are a fun, family-style recipe that everyone can enjoy. Lara Battigelli shares her take using tender Irish Hereford Prime Striploin Steaks. Served with guacamole, salsa, and optional toppings like grated cheese or sour cream.

Ingredients
2 Irish Hereford Prime Striploin Steaks
3 tbsp olive oil
Onion salt (to taste)
Lots of black pepper
Juice of 1 lime
2 tbsp peri peri seasoning
2 tsp smoked paprika
2 tsp cumin
6 medium wraps or 12 mini corn tortillas
1 red pepper, sliced
1 yellow pepper, sliced
1 red onion, sliced
To serve (optional): sliced red chilli, lime wedges, avocado, grated cheese, sour cream
Method
Place the steaks in a ziplock bag with 2 tbsp olive oil, lime juice, and half the spices. Marinate at room temperature for at least 30 minutes.
While the steaks marinate, slice the vegetables and prepare any sides you’d like to serve.
Heat 1 tbsp olive oil in a steak pan. Cook the steaks for 3.5 minutes on each side for medium-rare. Remove and rest.
In the same pan, sauté the peppers and onions for 3-4 minutes. Add the remaining half of the spices and mix well.
Thinly slice the steaks and serve them on a platter with the cooked vegetables.
Heat your tortillas on the pan for a few seconds.
Bring everything to the table and let everyone assemble their own fajitas!
