Beef Koftas

Summer on a plate — these Beef Koftas, made by Yvonne from the Hey Pesto kitchen using rich, tender Irish Hereford Prime beef steak mince, are packed with flavour and perfect for al fresco dining.

Ingredients

  • 450g Irish Hereford Prime Beef Mince
  • 1 small onion, peeled
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp sumac
  • 1 garlic clove
  • Grated zest of orange
  • 1 tsp salt
  • Fresh coriander or mint, finely chopped

Method

  1. You can grate the onion but the easiest way is to chop it roughly and blitz in a hand blender or food processor.
  2. Add in the cumin, coriander, sumac and garlic. Blend to a rough paste.
  3. Then add in the Irish Hereford Prime mince and blitz again.
  4. Finally mix in the orange zest, salt and herbs.
  5. It’s useful at this point to fry off a little piece of the mix to test for seasoning.
  6. Using wet hands, form the mix into small kebab-like shapes.
  7. Roast the koftas in the oven for 8 minutes at 200°C.
  8. You can also cook these koftas on the barbeque or in the air fryer. Remember if you’re using wooden skewers to soak them in cold water for 30 minutes first!
