Sirloin Roast with Cranberry & Red Wine Jus

Ingredients

Sirloin Roast

  • Sirloin Roast (size according to pack timings)
  • Salt (for seasoning)
  • Black pepper
  • Vegetables (for the roasting bed)

Cranberry & Red Wine Jus

  • Butter (for sautéing and finishing)
  • Shallot, finely chopped
  • Garlic, finely chopped
  • Red wine
  • Beef stock
  • Cranberries
  • Herbs
  • Redcurrant jelly

Method

Sirloin Roast

  1. Remove the sirloin from the fridge 1–2 hours before cooking.
  2. Pat dry and season generously with salt and black pepper.
  3. Preheat oven to 200°C fan.
  4. Sear the beef on all sides in a hot pan until well coloured.
  5. Place on a bed of vegetables, fat side up.
  6. Roast at 200°C for 15 minutes, then reduce the temperature and cook for the remaining time — see pack for exact timings.
  7. Rest for 20 minutes before slicing for tender, juicy beef.

Cranberry & Red Wine Jus

  • Melt butter in a saucepan and sauté shallot and garlic.
  • Add red wine, beef stock, cranberries, herbs and a spoon of redcurrant jelly.
  • Simmer gently, strain, then finish with a knob of butter for a glossy festive sauce.

Serve with

  1. Roasted cranberries tossed in honey, olive oil & rosemary
  2. Roast beetroot with chestnuts
  3. Crispy roast potatoes cooked in duck fat or oil
  4. A festive centrepiece that’s full of flavour and perfect for Christmas entertaining.
